AKABU Sake: The Story of Revival in Morioka, Iwate, Led by a Young, Award-Winning Toji
Akabu Shuzo, an Iwate Prefecture brewery that lost its original facilities in the Great East Japan Earthquake, has forged a new history at its "Fukkatsu-gura" (Revival Brewery) in Morioka. Akabu Shuzo, an Iwate Prefecture brewery, lost its original facility in Ohtsuchi-cho during the 2011 Great East Japan Earthquake. After considering closure, the brewery received immense support and reopened in 2013 as "Fukkatsu-gura" (Revival Brewery) in Morioka. Leading this new chapter is Ryunosuke Furutate, the 6th generation Toji. A graduate of Tokyo University of Agriculture and a national sake tasting champion, he took on the role of Toji at just 22, embarking on a new sake-making journey with young brewers of his generation.
