For their rice, Senkin focuses on "Kamenoo," the ancestral strain of many Japanese rice varieties. They have successfully restored the ancient DNA of Kamenoo and are cultivating it through organic farming, free from pesticides and chemical fertilizers, with an ambitious "Organic Town" initiative to use 100% organic rice. Senkin emphasizes harmony with nature, harnessing the power of microorganisms within the brewery to create sake that evokes a nostalgic yet fresh taste from Sakura City.
