Doi Shuzojo was founded in 1872 (Meiji 5) by its first master brewer, Yaichi Doi, at the young age of 15. In 2022, the brewery celebrated its 150th anniversary, marking a significant milestone and moving into a new phase while preserving its rich heritage. The flagship brand, "Kaiun," is crafted to be an easy-drinking sake that complements meals without overwhelming the palate. It is characterized by a moderate sweetness and subtle aroma, designed to enhance the flavors of various dishes, whether Japanese or Western. The brewery inherits the traditional Noto-ryu brewing style, consistently producing high-quality sake that is widely appreciated for its food-pairing versatility.
