Kiyamasa Shuzo, established in 1818 (Bunka 15) in Nabari City, Mie Prefecture, is a historic sake brewery renowned for its commitment to quality. Its flagship brand, "Jikon," derives its name from a Zen phrase meaning "to cherish the present moment," reflecting the brewery's dedication to crafting sake that captures the essence of the immediate taste. The 6th-generation owner and Toji (master brewer), Akihide Ota, skillfully blends traditional brewing methods with innovative techniques.
