Nanbu Bijin is a distinguished sake brewery located in Iwate Prefecture, Japan. Upholding the esteemed traditions and refined techniques of the Nanbu Toji school, one of Japan's three major master brewer guilds, the brewery approaches sake making with a humble philosophy, stating, "Every year is like being a first-year student." Their flagship brand, also named "Nanbu Bijin," has garnered significant international acclaim. Notably, "Nanbu Bijin Tokubetsu Junmai" was awarded Champion Sake at IWC 2017, and "Nanbu Bijin Junmai Daiginjo" secured first place at SAKE COMPETITION 2018. The brewery is dedicated to crafting the ultimate sake by meticulously overseeing every stage of production, from selecting premium rice and water to managing koji, yeast, moromi fermentation, pressing, pasteurization, and storage. Deeply rooted in its local community of Ninohe City, Iwate, Nanbu Bijin actively participates in regional initiatives, such as commemorating the 400th anniversary of Kindaichi Onsen and collaborating with Iwate University's i-Sake project, while also striving to share the allure of Japanese sake with the world.
