Noto Sake Breweries Lead the Way in Carbon Footprint Calculation for Sustainable Sake Production

Kazuma Shuzo and Yumeurara, sake breweries in the Noto region of Ishikawa Prefecture, are actively engaged in calculating the Carbon Footprint (CFP) of their sake and the rice used in its production. This initiative is part of the Reiwa 7 Ishikawa CFP Calculation Model Project, aiming to visualize CO2 emissions and foster sustainable sake brewing practices.

Understanding Carbon Footprint in Sake Production

CFP quantifies the total greenhouse gas emissions, converted to CO2 equivalents, throughout a product's entire lifecycle. This allows breweries to understand the environmental impact at each stage, from cultivation to consumption, and identify areas for reduction. Kazuma Shuzo and Yumeurara are utilizing this calculation to achieve environmentally conscious sake production.

Contributing to Regional and Environmental Sustainability

The proactive involvement of Noto's sake breweries in such an advanced environmental initiative is expected to elevate environmental awareness across the entire region.
